It has already been a long week and it is Wednesday. I am trying to make dinner every day and try some original recipes (Alisha you would be so proud of me!). Today one of my friend’s gave me a crock pot recipe and it was good. I have decided that prepping the meal midday is the only way it will get cooked. Tomorrow I am thinking of actually making a Rachel Ray recipe that I saw on her show today:
French Dip

1 wide baguette
2 tablespoons extra-virgin olive oil (EVOO),
1/2 cup freshly grated Parmigiano Reggiano
1 small onion, chopped
2 large clove garlic, divided, 1 chopped, 1 crushed
1 tablespoon tomato paste
2 cups beef stock
1 sprig of rosemary leaves, chopped
Salt and freshly ground black pepper
1/4 pound sliced roast beef
6 slices provolone cheese
I will need to cut the cheese amount in half but boy did it look yummy.
Today I completed two layouts for Helmar Adhesives. I leave for Las Vegas, Memory Trends in only three weeks. I cannot wait. It should be a busy 4 days but I am so looking forward to it. Well, I might sneak into bed early (11 pm). I had another long day of taxi’ing the kids around but I did sneak in two workouts at the gym. That sure felt good. Nothing like a good workout to kick up that energy level.
